Oil Mill

In November 2023, the Palazzo di Varignana farm opened its new oil mill: a 300-square-metre production facility surrounded by over 160,000 olive trees on the property.
The proximity of the mill to the olive groves allows for immediate milling of the harvest, enabling an integrated supply chain in a single location. This process is managed and organised by our dedicated staff, who lovingly care for the Varignana territory every day.

Milling is a crucial stage in oil production, and at our facility, it is carried out in a continuous two-phase cycle using modern equipment with low-oxidative impact systems and low-temperature processing. This allows us to work each variety of olive at its specific temperature, enhancing its fruity characteristics, or to control and modify the levels of polyphenols, adjusting the intensity of bitterness and/or spiciness.

Our state-of-the-art oil mill, entirely branded Mori Tem, incorporates the latest innovations in olive oil production technology, with the goal of producing extra virgin olive oil of the highest quality.

The key features of our mill are:

  • Variable-speed knife crusher: This allows us to extract the maximum aromas and flavours specific to each cultivar.
  • Vertical malaxers: Designed to minimise the surface area of the paste and its contact with oxygen.
  • 15 quintal/hour decanter: Balancing processing time with high-quality performance.

An important aspect of our oil production is the continuous filtration process, which occurs immediately as the oil exits the decanter.
